Marcus decides to make the recipe healthier by using 1½ cups grated cheese and 1 cup fat-free Greek yogurt; he is curious if the modified recipe will result in a dish of macaroni and cheese that looks, smells, and tastes as good as a serving from the original recipe. Marcus completes a batch of each recipe on Tuesday and his test panel arrives at 1:30 (about 30 minutes after both dishes were pulled from the oven). The panel is made up of three friends who know nothing about the experiment other than they will be tasting a food product. Marcus gave panel members no instructions other than to show up at his place at 1:30.
