This is due to the loss of water from the cells into the surrounding solution, causing the cells to become smaller and more irregular in shape. In a hypertonic environment blood cells undergo crenation, where they appear shrunken and spiky. There is no net movement of water into or out of the cells, so they retain their usual structure.
